The combination of marshy areas, the cultural heritage of local horticulturists and a plant that can be improved with modest but effective phenotypic selection techniques have, over the years, constituted a mixture, absolutely not reproducible, which makes Sperlonga and Fondi today a true productive district for the celery.


To date, the cultivation of the product, carried out using the local "Bianco di Sperlonga" ecotype, is based on an important selection process, which has allowed this crop to find rapid commercial enhancement and consumption on the markets since the 1960s. . And it is precisely from the link between the soil and climatic characteristics of the production area and the historical specialization of local farmers, that Sperlonga White Celery has managed to achieve high quality standards and specific characteristics, such as a marked elasticity of the coasts and less resistance to breakage , a greater flavor and a lower bitter taste, such as to make it immediately recognizable by the consumer.

Article 1
The Protected Geographical Indication (PGI) «Celano Bianco di Sperlonga» is reserved exclusively for the celery ecotype of Sperlonga which meets the conditions and requirements established by this production specification.

Article 2
Product description
2.1. Raw material
In the territory, referred to in art. 3, celery belonging to the Apium graveolens L. species is grown, the "Bianco di Sperlonga" ecotype, with white or whitish ribs. The characteristic light color is an intrinsic element of the ecotype, which however can be emphasized with denser sowing density.
2.2. Product characteristics
Upon release for consumption, the "Celano Bianco di Sperlonga" with Protected Geographical Indication must respond to the typical characteristics of the local "Bianco di Sperlonga" ecotype:
plant: medium size, compact shape, bearing 10-15 leaves;
leaves: light green color;
leaf petioles: white in color with a light light green tinge, not very fibrous, characterized by little evident ribs;
flavor: sweet and only moderately aromatic which makes it particularly suitable to be eaten fresh;
medium size: from 500 to 800 grams;
large caliber: over 800 grams.

Article 3
Delimitation of the geographical area
The "Celano Bianco di Sperlonga" Protected Geographical Indication (PGI) must be grown and packaged in the territory of the municipality of Fondi and the municipality of Sperlonga.

Article 4
Proof of origin
Each phase of the production process is monitored by documenting the inputs (incoming products) and outputs (outgoing products) for each. In this way, and through the registration in special lists, managed by the inspection body, of the particles
of the land registry on which the producers, the packers are cultivated, as well as through the timely declaration of the quantities produced to the control structure, and the traceability and traceability (upstream to downstream of the production chain) of the product is guaranteed. All natural or legal persons registered in the relative lists are subject to control by the control body, in accordance with the provisions of the production specification and the related control plan.

Article 5
Method of obtaining the product
5.1. Cultivation technology
Sowing must be practiced starting from the month of July. The seed can be arranged as it is or packed in boxes (broadcasters) or in honeycombed containers. For the germination of the seed, the presence of light is indispensable.
The seed is produced directly on the farm where the farmers operate the phenotypic selection (i.e. obtaining the seed from the best plants).
The seed produced by the single local companies, falling within the area referred to in art. 3, must be the one registered in the regional voluntary register referred to in the regional law of 1st March 2000, no. 15, which protects biodiversity in agriculture.
The transplant of the seedlings must take place when they have reached a height of about 10-15 cm. The sixth plant is 25-35 cm between the rows and 25-35 cm in the row, with an optimal investment of 10-12 plants / m2. A maximum investment of 14 plants / m2 is allowed.
The water requirement of the "Celano Bianco di Sperlonga" crop is ensured by irrigation. Rain irrigation or micro-irrigation systems are allowed.
The fertilization of the celery crop must be set with reference to the succession of crop cycles of the entire agricultural year. In particular, the nitrogen supplies must be less than 155 kg / ha in the year in compliance with Directive 91/676 / EEC.
Weed control must be particularly cared for in the first 40-50 days after transplanting as celery, in this phase, has a slow and therefore not very competitive growth towards weeds. The fight against weeds is carried out with environmentally friendly techniques such as: physical means (solarisation) or manual means (weeding or weeding). However, the use of registered herbicides for cultivation (anti-germination) is allowed both in the pre-transplant phase and in the post-transplant phase, within a maximum period of 3 weeks from the plant.
The defense against parasites must be carried out according to integrated pest management techniques in order to minimize or eliminate the residues of pesticides on celery.
The collection of "Celano Bianco di Sperlonga" must be done by hand, cutting the plant under the collar. The plants must be placed in the container, avoiding that friction occurs during this operation with consequent breakage
tissue and cellular juice spillage. Furthermore, the exposure to the sun of the product after harvesting must be reduced to a minimum.

Article 6
Elements that prove the link with the environment
The production area of ​​the "Celano Bianco di Sperlonga" is characterized by a very favorable soil and climatic situation for the cultivation of celery.
The soil consists partly of Mesozoic limestone soils and partly of limy-limestone alluvial soils. Typical of the production area is the presence of soils with an almost outcropping pitch, between the reclamation area and the sea, called "quagmire", on which the cultivation of celery has historically developed, first in the full area and then in protected cultivation. On these soils, characterized by a circulating solution with a high degree of salinity, celery finds its elective habitat which enhances its intrinsic characteristics.
The climate of the area affected by the PGI, of a temperate maritime type, is characterized by: average temperature between 17 and 18 ° C; average monthly temperature at 10 ° C, for 1-3 months; and average of the lows of the coldest month of 6.9 ° C; average annual precipitation of 727 and 1133 mm, with summer rainfall from 61 to 83 mm. In particular, in the coastal area a state of intense and prolonged dryness occurs from May to August.
All these parameters are ideal for celery cultivation.
The soil and climatic characteristics also influence the organoleptic characteristics of the "Sedano Bianco di Sperlonga" such as the sweet and only moderately aromatic flavor.
The "Celano Bianco di Sperlonga" was introduced in the area of ​​Fondi and Sperlonga around the 60s. The cultivation of celery immediately proved to be a valid form of use of the "Pantani" area, between the lake of Sperlonga and the sea. Tirreno, characterized by an outcropping aquifer, which today constitutes the area of ​​choice for the crop. The presence of the crop in the area referred to in art. 3 and proven by a rich fiscal documentation dating back to the early 60s, up to the present day, when the "Celano Bianco di Sperlonga", after a first introduction phase, finds rapid commercial enhancement and consumption on the markets of Rome. Over the past two decades, celery has grown steadily.

Article 7
The control on the conformity of the product to the specification is carried out, in accordance with the provisions of art 10 of the EEC Reg. 2081/92.

Article 8.
Packaging and labeling
8.1. packing
Celery can be packaged:
in containers containing a row of 4-5 celery, for a maximum weight of 5 kg;
in containers containing two rows of 8-10 celery, for a maximum weight of 10 kg.
For packs of 1 to 3 celery, the marking of the single head is mandatory.
The package must bear on the label in clear and legible print characters, in addition to the Community graphic symbol and related mentions (in compliance with the provisions of Reg. EC 1726/98 and subsequent amendments) and the information corresponding to the legal requirements the following additional indications:
«Celano Bianco di Sperlonga» followed by the acronym PGI (Protected Geographical Indication), larger than all the other indications that make up the label;
the name, the company name, the address of the manufacturing and packaging company.
The addition of any qualification not expressly provided for is prohibited. However, the use of indications referring to private brands is admitted, provided that they do not have a laudatory meaning or are such as to mislead the consumer, an indication of the name of the company from whose plots of land the product derives, as well as other truthful and documentable references that are permitted by current legislation and do not conflict with the purposes and contents of this specification.
The designation "Celano Bianco di Sperlonga" is untranslatable.

Article 9.
9.1. The logo called "Sedano Bianco di Sperlonga" consists of a rectangle with a light yellow background, inside which there is a square with jagged sides in black and the background shaded from white to blue, on which two celery are depicted. in turn there are four waves, two of which with a blue to white background and two with a green to white background, all with black edges.
Also at the bottom there are the inscriptions: WHITE CELERY green; DI SPERLONGA black color; PGI (Protected Geographical Indication) black.
9.2. The logo can be proportionally adapted to the various declinations of use.
9.3. The colorimetric Lindice is the following:
light yellow background: Pantone 1205C;

Article 10.
Marketing of processed products
The products for the preparation of which the I.G.P. 'Sedano Bianco di Sperlonga', also following processing and transformation processes, may be released for consumption in packs bearing the reference to the said denomination without affixing the Community logo, provided that:
the protected denomination product, certified as such, constitutes the exclusive component of the product category to which it belongs;
users of the protected designation product are authorized by the owners of the intellectual property right conferred by the registration of the I.G.P. «Celano Bianco di Sperlonga» gathered in a Consortium in charge of protection by the Ministry of Agricultural and Forestry Policies. The same consortium in charge will also register them in special registers and supervise the correct use of the protected name. In the absence of a designated consortium for protection, the aforementioned functions will be carried out by the Ministry of Agricultural and Forestry Policies as the national authority responsible for implementing Regulation (EEC) 2081/92.
